Courgettes With Tomatoes And Herbs - cooking recipe

Ingredients
    1 lb. Courgettes, washed and thickly sliced or frozen ones may be used
    1 oz. butter
    4 tomatoes, sliced into small pieces
    1 onion, cut into small pieces and slightly cooked
    1 Tbsp. chopped parsley (if available)
    1 tsp. herbs
    salt
    2 oz. Cheddar cheese, grated
    1/2 oz. fresh white breadcrumbs
Preparation
    Bring the Courgettes to the boil, in salted water, and cook for 3 minutes.
    Drain and place in an ovenproof dish.
    Heat butter; add tomatoes, garlic or onion, herbs and salt and cook until a thickish mixture forms.
    Taste and adjust seasoning; spoon over Courgettes.
    Sprinkle with cheese and breadcrumbs and bake at gas mark 4 (325\u00b0) for 20 to 25 minutes.
    Serve hot by itself, or with beefburgers, chops or steaks.
