Carrot Cake - cooking recipe
Ingredients

4 eggs
1 1/2 c. oil
2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 tsp. vanilla
1/2 or 1 c. chopped walnuts
2 junior baby food carrots
Preparation

Beat eggs in mixing bowl, add oil and sugar, mixing well. Sift dry ingredients together and add in portions to egg mixture. Add vanilla and baby food carrots.
Stir in nuts.
Bake in 9 x 13-inch pan (greased and floured) in 300\u00b0 oven for 45 minutes to 1 hour.
May substitute jar carrots with 2 cups grated carrots.
