Cheese Enchiladas(Enchiladas De Queso) - cooking recipe

Ingredients
    8 oz. Cheddar cheese or a combination of Cheddar and Monterey Jack, shredded (2 c.)
    1/4 c. vegetable oil
    6 corn tortillas
    4 green onions, chopped
    enchilada sauce
Preparation
    Prepare sauce.
    Heat in a medium saucepan.
    Reserve 1/3 cheese for topping.
    Heat oil in a medium pan.
    Soften one side of tortilla; quickly turn to soften other side, 3 to 5 seconds.
    Drain on paper towels.
    Immediately dip tortilla in hot sauce.
    Remove at once.
    Place on plate and arrange either flat or rolled.
    Sprinkle cheese with chopped onion and place in a shallow medium baking dish.
    Cover with sauce and rest of cheese.
    Bake in a preheated 350\u00b0 oven for 15 to 20 minutes, until cheese is melted.
