Shoe Peg Salad - cooking recipe

Ingredients
    1 (16 oz.) can Shoe Peg corn
    1 (16 oz.) can French-style green beans
    1 (16 oz.) can tiny peas
    1 (2 oz.) jar chopped pimento
    1 onion, sliced into rings
    1 green bell pepper, chopped
    1 c. chopped celery
    1 (8 oz.) can sliced water chestnuts, drained
    1/2 c. wine vinegar
    1 c. sugar
    1/2 c. oil
    salt to taste
Preparation
    Drain corn, beans, peas and pimento. Combine all vegetables in salad bowl.
    Mix vinegar, sugar, oil and salt in small bowl. Add to vegetable mixture.
    Mix well.
    Marinate in the refrigerator overnight.

    182 calories, total fat 8 g, 36% calories from fat, 3 g protein, 28 g carbohydrates, 3 g fiber, 0 mg cholesterol and 221 mg sodium.
