Curried Rice And Carrots - cooking recipe

Ingredients
    2 tsp. butter
    2 Tbsp. shallots, chopped
    1 tsp. garlic, minced
    1 bay leaf
    2 tsp. curry powder
    1 c. rice
    1 carrot, peeled
    1 1/2 c. chicken broth (unsalted)
Preparation
    Melt butter in saucepan.
    Add shallots and garlic.
    Cook briefly, stirring.
    Add bay leaf.
    Sprinkle with curry powder. Add rice and thin carrot strips, stirring.
    Add broth.
    Cover; bring to a boil.
    Let simmer for 17 minutes.
    Serves 4.
