Banana Nut Cake - cooking recipe
Ingredients

2 1/4 c. flour
1 2/3 c. sugar
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
1 tsp. salt
2/3 c. finely chopped nuts
2/3 c. shortening
2/3 c. buttermilk (I often substitute regular milk for buttermilk)
3 eggs
1 1/4 c. mashed ripe bananas
Preparation

Heat oven to 350\u00b0.
Grease and flour one 9 x 13-inch pan or two 9-inch pans or three 8-inch pans.
Measure all ingredients into large mixing bowl and blend 1/2 minute on low speed, scraping bowl constantly.
Beat 3 minutes on high and then pour into pan(s). Bake oblong pan 45 minutes, layers about 35 minutes or until wooden toothpick inserted into center comes out clean.
Cake is good eaten without icing or can be iced with Caramel Fudge Icing.
