Broccoli-Onion Pilaf - cooking recipe

Ingredients
    1 onion, cut into thin wedges
    2 cloves garlic, thinly sliced
    1/2 tsp. crushed red pepper flakes
    1 Tbsp. olive oil
    2 Tbsp. red wine vinegar
    1/4 tsp. black pepper
    3 c. broccoli florets, steamed
    2 Tbsp. grated Parmesan cheese
    2 Tbsp. shredded carrots
    1 c. millet or rice, cooked in reduced fat chicken
Preparation
    In a large nonstick skillet over medium-low heat, cook the onion, garlic and red pepper flakes in the oil until the onion is golden, 10 to 20 minutes.
    Stir in the vinegar, black pepper, broccoli and millet or rice.
    Toss to combine and sprinkle with the Parmesan and carrots.
    Serves 8.
