Italian Country Chicken - cooking recipe

Ingredients
    3 Tbsp. olive oil
    1 large onion, cut into eights
    2 garlic cloves, minced
    1 lb. boneless chicken breast halves, skinned and cut into strips
    grated Parmesan cheese
    1 1/2 (6 oz.) jars marinated artichoke hearts, undrained
    1 (7 oz.) jar roasted red bell peppers, undrained
    1/2 c. pitted black olives
    salt and pepper
    3/4 lb. tricolor fusili, freshly cooked
Preparation
    Heat oil in large skillet over medium heat.
    Add onion and garlic; cook until translucent, stirring occasionally, about 10 minutes.
    Add chicken, stir until cooked through, about 5 to 10 minutes.
    Mix in artichokes with liquid, peppers with liquid and olives; heat through.
    Season with salt and pepper.
    Pour over cooked hot pasta and toss well.
    Serve with Parmesan separately. Serves 6.
