Mexican Chicken - cooking recipe

Ingredients
    1 Tbsp. oil
    1 lb. boneless, skinless chicken
    1 small onion, chopped
    1 green pepper, chopped
    1 pkg. frozen sweet corn
    1 c. chicken broth
    1 c. medium salsa
    1 1/2 c. Minute rice
    1/2 c. Cheddar cheese
Preparation
    Heat oil.
    Add chicken, onion and pepper.
    Cook and stir until chicken is cooked clear through.
    Add corn, broth and 1 cup medium salsa.
    Bring to a boil.
    Stir in rice.
    Cover and remove from heat when comes to a boil again.
    Let stand 5 minutes.
    Fluff with fork.
    Sprinkle cheese on top.
    Cover and let stand 2 or 3 minutes, until cheese melts.
