French Market Soup - cooking recipe

Ingredients
    1 pkg. 15 bean soup mix
    1 Tbsp. salt
    3 qt. water
    ham hock
    bay leaf
    1/8 tsp. thyme
    1 qt. canned tomatoes
    2 medium onions, chopped
    6 stalks celery, chopped
    1 green pepper, chopped
    2 cloves garlic, chopped
    red pepper to taste
    1/2 chicken, cooked
    1 lb. smoked sausage
    2 Tbsp. parsley
Preparation
    Soak soup beans overnight with salt.
    Drain and add water, ham hock, bay leaf and thyme. Cover and simmer for 3 hours.
    Add tomatoes, onions, celery, green pepper, garlic and red pepper. Simmer 1
    1/2 hours, uncovered. Add chicken and smoked sausage. Ten minutes before serving, add parsley.
