Lemon Pie - cooking recipe
Ingredients

1/4 c. lemon juice
1 c. sugar
1/4 c. flour
2 c. water
1 Tbsp. margarine
1 tsp. lemon rind
1/4 tsp. salt
3 Tbsp. cornstarch
3 eggs, separated
Preparation

Combine sugar, salt, flour and cornstarch in double boiler; stir in water.
Cook over medium heat until mixture becomes thick and clear.
Add a little hot mixture to beaten egg yolks.
Return to mixture and cook a few minutes more.
Remove from heat and blend in lemon juice, rind and butter.
Pour into a baked pie shell. Cool slightly.
