Chicken Cacciatore Casserole - cooking recipe
Ingredients

1 1/4 c. uncooked quick cooking rice
2 Tbsp. chopped parsley
1 (14 1/2 oz.) can chicken broth
1 (6 oz.) can tomato paste
1 (4 oz.) can sliced drained mushrooms
1/2 c. each: water, dry white wine, chopped onion and bell pepper
2 tsp. basil
1 tsp. garlic salt
1/2 tsp. Italian seasoning
1/4 tsp. black pepper
6 chicken breast fillets
1 c. shredded Mozzarella cheese
1/4 c. grated Parmesan cheese
Preparation

Spread rice in bottom of lightly greased 13 x 9 x 2-inch baking dish.
In large bowl, stir together 1 tablespoon parsley and remaining ingredients except chicken and cheeses.
Pour over rice. Arrange chicken on top of rice mixture; bake covered at 350\u00b0 for 45 to 50 minutes.
Uncover casserole; sprinkle Mozzarella and Parmesan cheese over top and bake 5 minutes longer.
Sprinkle remaining parsley over top just before serving.
Makes 6 servings.
