Chicken Or Crab Salad Indienne - cooking recipe

Ingredients
    4 c. rice (may use Uncle Ben's)
    1/2 c. diced celery
    1/4 c. chopped green pepper
    1/3 c. raisins
    2 tsp. curry powder or to taste (I used more curry)
    grated coconut
    2 c. crab meat or chicken, cut into bite-size pieces
    4 strips crisp bacon, crumbled
    1 c. mayonnaise
    1 c. dairy sour cream
    chopped nuts
Preparation
    Cook rice as directed on package.
    Several hours before serving, combine rice with cooked chicken (or crab meat), celery, pepper, bacon and raisins.
    Make dressing of curry powder, mayonnaise and sour cream.
    Blend 3/4 dressing into salad.
    Chill. Serve on crisp greens and top with remaining dressing.
    Serve with coconut, nuts and chutney, if desired.
    Serves 8 to 10.
