Buckeyes - cooking recipe
Ingredients

1 1/2 c. creamy peanut butter
1/2 c. butter or margarine, room temperature
1 tsp. vanilla
1 (1 lb.) box powdered sugar
1 (6 oz.) pkg. chocolate chips
2 Tbsp. solid vegetable shortening
Preparation

Line baking sheet with wax paper.
In bowl, mix peanut butter, vanilla, powdered sugar and butter.
Using 1 heaping tablespoonful, shape into balls with hands.
Dough will be stiff.
Place balls on wax paper and chill.
Melt shortening and chocolate chips in small bowl or cup over hot water.
Remove from heat; make sure chocolate is lump free.
Using a toothpick, dip each chilled ball into chocolate about 3/4 to top, leaving the \"eye\" clear.
Return to wax paper and chill again.
Store between layers of waxed paper in tightly covered container.
Makes 60 candies at 89 calories each. (As in the buckeye state of Ohio, these resemble the \"eye\" of an opened chestnut.)
