Italian Sausage Soup - cooking recipe
Ingredients

1 lb. Italian sausage
1 c. chopped onions
2 cloves garlic, sliced
5 c. beef broth
1/2 c. water
1/2 c. dry red wine
2 c. chopped peeled tomatoes
1 c. sliced carrots
1/2 tsp. basil
1/2 tsp. oregano
8 oz. tomato sauce
1 1/2 c. sliced zucchini
8 oz. frozen meat or cheese tortellini
3 Tbsp. chopped parsley
1 medium green pepper
Parmesan cheese
Preparation

Brown sausage and remove from pot.
Saute onions and garlic in 1 tablespoon of sausage drippings.
Add broth through sausage. Simmer uncovered for 30 minutes.
Skim the fat from the top of the soup.
Stir in zucchini through the pepper.
Simmer covered for 35 to 40 minutes until the tortellini are tender.
Serve with Parmesan sprinkled on top.
