Potato Pancakes - cooking recipe

Ingredients
    1 c. sifted all-purpose flour
    2 tsp. salt
    2 tsp. baking powder
    1/8 tsp. white pepper
    2 eggs, unbeaten
    1 c. milk
    4 Tbsp. melted butter
    3 c. finely grated or shredded raw potatoes
Preparation
    Grate potatoes just before using to prevent discoloration. Combine ingredients in a large bowl.
    Beat on low speed until blended.
    Drop by spoonfuls into a hot greased griddle.
    Fry over medium heat until crisp and brown on underside.
    Turn and brown other side.
    Serves as vegetables or main dish.
