Gumbo - cooking recipe

Ingredients
    1 c. oil
    1 c. flour
    1 stick margarine
    1 c. chopped onions
    1/2 c. chopped bell pepper
    1/2 c. chopped celery
    4 cloves garlic, minced
    2 c. chopped okra, cooked
    3 qt. water
    1 can Ro-Tel tomatoes with chilies
    1 Tbsp. Worcestershire
    salt and pepper to taste
    1 lb. Italian sausage
    2 lb. shrimp
    1/2 lb. fish fillets
    1 pt. oysters
    cut up cooked chicken
    cooked rice
Preparation
    Make roux in microwave:
    Mix oil and flour and cook 2 minutes. Stir.
    Continue cooking 2 minutes and stir until it is the color of a copper penny.
    Do not burn.
    In large aluminum Dutch oven or pot (not iron), saute onion, celery, peppers, garlic and okra in margarine.
    Add roux, water, Ro-Tel and Worcestershire and season with salt and pepper.
    Add sausage cut in 1-inch pieces.
    Cook 1 hour.
    Add shrimp, fish, oysters and chicken.
    Cook about 30 minutes.
    Serve over cooked rice.
