Microwave Peanut Brittle - cooking recipe

Ingredients
    1 c. fresh peanuts
    1 c. sugar
    1/2 c. light corn syrup
    pinch of salt
    1 tsp. oleo or butter
    1 tsp. vanilla
    1 tsp. soda
Preparation
    Combine peanuts, sugar, syrup and salt in 1 1/2-quart casserole.
    Microwave on High for 7 to 8 minutes; stir well for 4 minutes.
    Add butter and vanilla to syrup; blend well.
    Peanuts will be lightly browned and syrup very hot.
    Add soda; stir gently until light and foamy.
    Pour mixture onto greased cookie sheet.
    Let cool for 30 minutes to 1 hour.
    Break into pieces. Store in airtight container.
