California Beef Rice Skillet Dinner - cooking recipe

Ingredients
    1 lb. ground beef, season to taste
    1 large onion, chopped
    1 can beef broth
    1 1/2 c. water
    1 c. uncooked rice
    1 medium bell pepper
    1 medium tomato
    1 c. shredded Monterey Jack or Cheddar cheese
Preparation
    Brown beef; drain off fat.
    Add onion; stir.
    Stir in beef broth, water and rice.
    (Optional:
    I like to season with garlic salt and Creole seasoning at this point.)
    Bring to a boil, reduce heat, cover and simmer for about 25 minutes or until liquid is absorbed.
    Add bell pepper and tomato.
    Cook for another 5 minutes. Sprinkle with cheese and serve.
