Sunny Morning Brunch Cake - cooking recipe

1 c. dairy sour cream
3 eggs
1/3 c. oil
1/3 c. water
1 tsp. almond extract
1/4 c. flaked sweetened coconut
1/4 c. blanched sliced almonds
1 (12 oz.) jar apricot preserves
1 box yellow cake mix
Preparation

Preheat oven to 350\u00b0.
In large mixing bowl, combine cake mix, sour cream, eggs, oil, water and almond extract; beat 3 minutes at medium speed.
Generously grease a 10-inch tube pan; sprinkle coconut and almonds in pan, then top with 1/3 jar preserves.
Pour in half of cake batter, dot with remaining preserves and cover with rest of cake batter.
Bake 50 to 60 minutes (cake is done when toothpick inserted in center comes out clean).
Cool 30 minutes, then invert on serving dish.
