Costa Rican Rice - cooking recipe

Ingredients
    1 medium onion, sliced thin
    1/2 medium green pepper, chopped
    1 clove garlic, minced
    2 medium tomatoes, chopped
    1/2 head cabbage, shredded
    3 medium carrots, cut in round slices
    1 lb. sausage
    1 c. long grain rice
    2 1/2 c. water
    salt and pepper to taste
    sharp Cheddar cheese, shredded
Preparation
    Prepare vegetables.
    Combine into one pot.
    Put 1/2 cup water into vegetables; cook vegetables until they boil.
    Let boil for 10 minutes.
    Cover and remove from heat.
    Fry sausage until brown (scrambled); drain off grease.
    Put sausage aside.
    Put 1 tablespoon oil in same pan; heat oil.
    Empty rice into hot oil. Lightly brown slowly.
    Empty 2 cups water into rice; simmer slowly until done.
