Oxtail Soup - cooking recipe

Ingredients
    3 lb. oxtail
    2 onions, chopped
    1 bay leaf
    1 Tbsp. salt
    1/2 tsp. pepper
    2 1/2 qt. water
    3 carrots, cut up
    1 c. celery, cut up
    1 potato, cut in cubes
    1/2 c. barley
    2 Tbsp. parsley
Preparation
    Place first 6 ingredients in a kettle, simmer for 3 hours. Skim fat from soup.
    Add remaining ingredients and simmer for 30 minutes or until vegetables are tender.
    Add parsley and serve.
