Fresh Apple Cake - cooking recipe

Ingredients
    1 c. oil
    2 c. sugar
    3 eggs, well beaten
    2 1/2 c. flour
    1 tsp. soda
    1 tsp. salt
    1 tsp. cinnamon
    1 tsp. nutmeg
    1 tsp. vanilla
    4 c. chopped and peeled apples
    1 c. ground pecans
Preparation
    Combine oil and sugar; beat in eggs.
    Sift dry ingredients and add to egg mixture.
    Fold in vanilla, apples and nuts.
    Bake in a 9 x 13-inch pan (prepared with Pam and flour) at 325\u00b0 for 55 minutes.
    Cool and frost if desired.
    Will stay moist and fresh for days.
