Arroz Con Pollo - cooking recipe

Ingredients
    1 chicken, cut up
    4 Tbsp. olive oil
    1 c. chopped onions
    1 Tbsp. parsley
    1 1/2 c. canned peas
    3 c. hot chicken broth
    1 1/2 c. diced tomatoes
    1 clove garlic
    1/2 tsp. pepper
    3 tsp. salt
    2 c. raw rice
    1/2 c. pimentos
Preparation
    Brown chicken in oil.
    Add onions, garlic, salt and pepper. Make chicken broth with 3 cubes of chicken bouillon.
    Cut up tomatoes from the can.
    Cook rice, 1/2 the amount of time, 10 minutes.
    Add tomatoes to chicken and broth and cook for 20 minutes.
    Add rice (half cooked) to chicken.
    Cook for 20 minutes more or until rice is tender.
    Add peas, pimentos and parsley. Cook for 5 minutes.
