Mushroom Barley Soup - cooking recipe

Ingredients
    2 large onions, chopped
    3 medium size carrots, sliced
    1/2 lb. mushrooms, sliced thin
    4 c. low sodium beef broth
    1/4 c. chopped parsley
    1/2 c. medium size barley
    1/4 tsp. black pepper
Preparation
    Place all ingredients in a large heavy saucepan and bring to a boil on high heat about 4 minutes.
    Adjust heat so mixture bubbles gently, and simmer, partly covered, for 40 minutes or until the barley is tender.
