Mushroom Barley Soup - cooking recipe

Ingredients
    1/2 c. sliced onion
    1/2 c. sliced carrot
    1/2 lb. sliced mushrooms
    2 Tbsp. margarine
    1 Tbsp. flour
    3 c. chicken broth
    1/2 c. medium pearled barley
    1/2 c. milk
    1 1/2 c. cooked chicken or turkey
    salt and pepper to taste
Preparation
    In large saucepan, saute vegetables in margarine for 10 minutes.
    Stir in flour.
    Add the broth and heat, stirring constantly, until mixture comes to a boil.
    Add barley.
    Cover and simmer until barley is cooked through (about 1 hour).
    Stir in milk, meat, salt and pepper.
    Heat through and serve.
