Ingredients

1 stick butter
1 Tbsp. vinegar
1 c. flaked coconut
2 1/2 c. sugar
5 eggs, well beaten
1 Tbsp. vanilla
2 (9-inch) pie shells
Preparation

Melt butter and remove from heat.
Stir in vinegar and sugar. Allow to cool slightly.
Add beaten eggs, coconut and vanilla. Pour into pie shells.
Bake in a 425\u00b0 oven for 20 minutes.
Reduce heat to 350\u00b0 and continue baking for 30 minutes or until sets.
