Sausage Patties(Less Fat, No Chemicals) - cooking recipe

Ingredients
    2/3 c. parsley leaves
    1 small onion, peeled
    2 lb. lean pork shoulder, cut into 1-inch squares
    6 oz. pork fat (optional), cut into 1-inch squares
    2 tsp. salt
    1/4 tsp. ground cloves
    1/4 tsp. freshly ground nutmeg
    1/4 tsp. cinnamon
    1/4 tsp. dried oregano
    1/4 tsp. dried basil
    1/2 tsp. freshly ground pepper
    2 Tbsp. water
    1/2 tsp. liquid smoke
    1/4 to 1/2 c. flour
Preparation
    In food processor, mince the parsley and onion by turning the machine on and off.
    Reserve them.
    Mix the pork and fat in a bowl and divide the mixture into three batches.
    Put 1 batch in the work bowl and chop by turning the machine on and off until it reaches the desired texture.
    Transfer to a large bowl; repeat with remaining two batches.
