Pilau De Camarones (Braised Rice With Shrimp And Tomatoes)(Dominican Republic) - cooking recipe

Ingredients
    6 strips bacon, cut crosswise into 1/2-inch pieces
    1 1/2 lb. raw shrimp
    2 Tbsp. finely chopped hot chilies
    1 Tbsp. finely chopped garlic
    2 c. uncooked long grain white rice
    9 medium size, firm, ripe tomatoes, peeled, seeded and finely chopped
    2 tsp. salt
    freshly ground black pepper
    2 Tbsp. finely chopped, fresh parsley
    freshly grated imported Parmesan cheese
    3 c. chicken stock (fresh or canned)
Preparation
    Shell
    the
    shrimp.
    Devein
    them
    by
    making a shallow incision down
    the backs with a small, sharp knife and lifting out the
    black\tor white intestinal vein with the point of the knife. Cut
    the shrimp crosswise into 1/2-inch pieces and set them aside.
