Diabetic Cake - cooking recipe

Ingredients
    2 c. raisins
    2 c. plain flour
    1 tsp. cinnamon
    1/2 tsp. nutmeg
    1/8 tsp. salt
    1 tsp. soda
    2 eggs
    3/4 c. oil
    1 c. applesauce (sugar-free)
    2 c. fruit cocktail, drained (sugar-free)
    1 c. nuts
Preparation
    Cook raisins in 2 cups water until all the water is cooked dry.
    Sift flour, cinnamon, salt and soda together.
    Add eggs, oil and applesauce.
    Beat for 2 to 3 minutes until well mixed, then add fruit cocktail and raisins and 1 cup nuts, if desired.
    Bake in tube pan for 40 minutes at 350\u00b0.
