Tuna Fried Rice - cooking recipe

Ingredients
    1 c. converted rice
    1 medium onion, thinly sliced
    2 Tbsp. vegetable oil
    1 (10 oz.) pkg. frozen Oriental-style vegetables with seasoning sauce, thawed
    1 (2 oz.) jar chopped pimento (optional)
    2 Tbsp. soy sauce
    1 (7 oz.) can solid pack tuna, drained
Preparation
    Prepare rice according to package directions.
    Saute onion in oil over medium heat in 12-inch skillet or wok until tender, about 5 minutes.
    Stir in cooked rice and vegetables; cook and stir 5 to 7 minutes.
    Stir in pimento, soy sauce and tuna, being careful not to break up tuna.
    Serve with additional soy sauce, if desired. Makes 4 to 6 servings.
