Quail Risotto - cooking recipe

Ingredients
    8 quail
    1/3 c. butter
    1 onion, sliced
    1 leek, sliced
    2 sweet peppers, sliced
    6 strips bacon, diced
    chicken stock
    1 1/3 c. rice
    salt and pepper
    3 tomatoes, chopped
    chicken stock
    1/2 c. Parmesan cheese
    bunch of parsley, minced
Preparation
    Saute the onion in butter; add leek, green pepper and bacon. Cook until tender.
    Stuff quail with mixture and place in a heavy, tightly covered pot and cook until tender.
    Add rice, salt, pepper and tomato; stir.
    Add stock to make approximately 2 2/3 cups liquid.
