Fried Rice - cooking recipe

Ingredients
    4 c. cooked and drained rice
    4 Tbsp. oil
    1 1/2 c. meat, chicken, pork or turkey
    3/4 c. chopped scallions
    1 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. soy sauce
    2 eggs, beaten
    1/2 c. firmly chopped parsley
Preparation
    Cook rice the day before and refrigerate overnight.
    Heat oil in deep skillet or wok.
    Cook rice in it, stirring steadily and pressing out lumps, until lightly browned.
    Add meat, onions, salt and pepper.
    Cook 1 minute, stirring constantly.
    Make a hollow in the center and pour eggs into it.
    Stir until they begin to set. Mix into rice mixture.
    Blend in parsley and soy sauce.
