Diabetic Carrot Pennies - cooking recipe
Ingredients

4 c. carrots, very thinly sliced
1/2 tsp. dried basil leaves
1/2 tsp. salt
dash of pepper
1/4 c. water
2 Tbsp. margarine
Preparation

Place carrots in 1 1/2-quart casserole.
Sprinkle with basil, salt and pepper.
Toss together.
Add water and dot with margarine.
Cover and bake at 350\u00b0 for 65 to 70 minutes, until fork-tender.
Makes 6 servings.
