Carrot Cake - cooking recipe

Ingredients
    1 c. cooking oil
    2 c. sugar
    3 eggs
    2 c. flour
    2 tsp. cinnamon
    1 tsp. salt
    2 1/2 tsp. baking soda
    1 c. coconut (optional)
    8 oz. crushed pineapple with juice
    2 c. grated carrots
    3/4 c. chopped nuts
Preparation
    Cream oil and sugar.
    Add eggs and beat well.
    Mix flour, cinnamon, salt and baking soda.
    Add flour to creamed ingredients and beat until smooth.
    Add coconut, pineapple, carrots and nuts and mix in well.
