Spinach Pasta Primavera - cooking recipe
Ingredients

18 oz. spinach fettuccine
6 Tbsp. butter
1 large minced shallot
2 c. heavy whipping cream
1 c. dry sherry
1/8 tsp. nutmeg
1 small yellow squash
1 small zucchini squash
1 large red bell pepper
1 large blanched carrot
1 large green chili pepper
1 bunch broccoli florets, blanched
1/2 bunch celery
1 oz. grated Parmesan cheese
1 Tbsp. chopped parsley
Preparation

Thinly slice yellow squash, zucchini squash, red bell pepper, carrot and green chili pepper.
Cook fettuccine 10 minutes in boiling, salted water or to desired texture.
Drain and wash under cold water.
