Ingredients

1/2 c. uncooked rice
3 c. boiling water
1 1/2 tsp. salt
1 (15 oz.) can Eagle Brand milk
1/2 c. seedless raisins
2 eggs
1 tsp. vanilla
1/4 tsp. nutmeg
Preparation

Put rice, salt and water into a heavy saucepan.
Cover and cook over medium heat until water boils.
Reduce heat and simmer 15 to 20 minutes or until rice is tender.
Remove from heat.
Stir in milk and raisins; add slightly beaten eggs gradually while beating into rice mixture.
Return to low heat and cook, stirring constantly, until mixture coats large metal spoon.
Remove from heat; stir in vanilla and nutmeg.
Serve hot or cold.
