Caribou (Modern)(Huron) - cooking recipe

Ingredients
    3 lb. caribou
    oil
    3 medium onions
    5 carrots
    pepper
    4 cloves garlic
    flour
    fat
Preparation
    Chop onions and carrots.
    Marinate meat 3 hours in a mixture of oil, vegetables and pepper.
    Turn meat every 30 minutes.
    Dry meat and insert slivered garlic into meat.
    Flour and place in roasting pan with fat.
    Roast at 500\u00b0 for 30 to 40 minutes (rare) or 45 minutes (medium).
