"Perfect" Potato Soup - cooking recipe
Ingredients

2 to 4 tsp. butter or olive oil
3 c. sliced leeks or onions
3 c. diced potatoes
2 qt. chicken stock
salt and pepper to taste
Preparation

Heat butter/oil in large skillet and saute leeks/onions and potatoes until golden brown.
Bring stock to boil and add sauteed vegetables.
Simmer for half hour or until potatoes are soft. Remove vegetables from broth and puree in blender or use potato masher.
Add broth; adjust seasoning.
Serve with chopped parsley.
