Zucchini Parmesan - cooking recipe

Ingredients
    1/4 c. peanut oil
    8 medium zucchini
    2/3 c. chopped onion
    2 Tbsp. chopped parsley
    1 large clove garlic, crushed
    1 Tbsp. salt
    1/4 tsp. pepper
    1/4 tsp. oregano leaves
    1/4 tsp. rosemary leaves
    4 c. peeled, chopped tomatoes
    1/2 c. Parmesan cheese
Preparation
    Heat oil in a skillet.
    Thinly slice zucchini; add to oil with onion, parsley, garlic, salt, pepper, oregano and rosemary.
    Saute over medium heat until zucchini is tender.
    Toss in tomatoes and continue to saute for 5 more minutes.
    Turn into a serving dish; sprinkle with cheese.
