Parmesan-Crusted Perch(Low-Fat) - cooking recipe
Ingredients

2 Tbsp. grated Parmesan cheese, divided
1/2 c. plain low-fat yogurt
2 Tbsp. prepared horseradish
2 Tbsp. Dijon mustard
2 Tbsp. lemon juice
1 tsp. margarine, melted
8 (4 oz.) perch fillets
vegetable cooking spray
Preparation

Combine 1 tablespoon cheese and next 5 ingredients; spread evenly on 1 side of fillets.
Place fillets, coated side up, on a rack coated with cooking spray.
Place rack in broiler pan. Sprinkle with remaining cheese.
Broil 6 inches from heat (with electric oven door partially opened) for 18 minutes, or until golden and fish flakes easily when tested with a fork.
