*Rich Lemon Filling - cooking recipe

Ingredients
    4 Tbsp. cake flour
    1/4 c. lemon juice
    dash of salt
    3/4 c. sugar
    1/2 c. water
    1 egg, well beaten
    2 Tbsp. butter
    1/2 tsp. grated lemon rind
Preparation
    Combine flour, sugar and salt in the top of a double boiler. Add lemon juice, water and egg.
    Place over rapidly boiling water and cook for 10 minutes or until thickened, stirring constantly. Add butter and lemon rind; cool.
    Use as a filling between cake layers or in a jelly roll.
    Sprinkle top with confectioners sugar.
