Poached Fish Fillets With Rich Wine Sauce - cooking recipe

Ingredients
    4 large or 8 small fish fillets
    1 part dry white wine and 1 part water (enough to cover fillets)
    1 onion, sliced
    tarragon to taste
    grated Parmesan cheese
    4 Tbsp. margarine or butter
    4 Tbsp. flour
    1 c. milk (for richer sauce, use evaporated skim milk)
    salt and pepper to taste
Preparation
    In a shallow pan or skillet, bring to a boil enough wine and water to cover the fish, adding a pinch of salt, tarragon and the sliced onion.
    Add the fillets and simmer gently (do not boil) until fish flakes easily.
    This will take about 5 minutes.
    Test for doneness with a fork or toothpick.
