Chicken Marengo - cooking recipe

Ingredients
    3 1/2 lb. fryer, cut up
    salt
    1/4 c. olive oil
    1/4 c. butter
    1 clove garlic, minced
    1 fresh onion
    1/2 lb. fresh mushrooms, sliced
    1 (28 oz.) can whole tomatoes, drained and cut up
    1/4 tsp. oregano
    1/4 tsp. basil
    pinch of sugar
    1/2 c. chicken broth
    1 c. dry white wine
    3 Tbsp. chopped parsley
Preparation
    Sprinkle chicken pieces with salt and dredge in flour.
    In skillet combine oil and butter and brown chicken.
    Keep butter mixture at a gently sizzling temperature.
    Cook 40 minutes. Remove chicken to paper towel.
    Add garlic and mushrooms to skillet and saute.
    Drain off excess fat and add tomatoes, oregano, basil, sugar, chicken broth and wine.
    Simmer over low heat for 10 minutes.
    Add salt to taste.
    Place chicken in casserole and pour wine sauce over and bake covered at 350\u00b0 for 1 hour.
    Serves 4.
