Heavenly Potatoes - cooking recipe

Ingredients
    3 lb. baking potatoes, peeled
    1 pt. low-fat cottage cheese
    2 beaten eggs
    1 pt. dairy sour cream
    1/4 c. chopped scallions
    1/2 stick butter, softened
    salt and pepper to taste
Preparation
    Cook potatoes for 20 minutes, until tender.
    Drain and mash. Butter a 2-quart casserole and set aside.
    In a large bowl, beat cheese and eggs with electric mixer at high speed until almost smooth.
    Add sour cream, scallions, butter, salt and pepper.
    Beat at low speed until combined.
    Stir in the mashed potatoes and put mixture in prepared casserole.
    Bake in a preheated 325\u00b0 oven for 50 to 60 minutes, until lightly browned.
