Helen Emerton'S Beef & Rice - cooking recipe

Ingredients
    2 Tbsp. chopped green onion
    1 lb. fresh mushrooms (or 8 oz. canned)
    2 Tbsp. butter
    2 Tbsp. flour
    1/2 c. Half & Half or cream
    Salt & Pepper to taste
    Sherry
    1 3 oz. pkg. cream cheese
    1/2 c. sour cream
    2 c. cooked roast beef or more
    1 10 oz. pkg. frozen chopped spinach, cooked & drained
    1 6 oz. pkg. Uncle Ben's wild rice, cooked as per pkg.
    1 tsp. curry powder
    Paprika
Preparation
    Saute' onions and mushrooms in butter.
    Add flour, cream, salt and pepper; thin with sherry and sour cream.
    Add cream cheese and beef.
    Add cooked spinach and rice.
    Mix all together and put in large casserole.
