Chicken With Vegetables(From Italy) - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 lb. boneless chicken breasts
    1 pkg. frozen peas
    2 cans chicken broth
    1 c. rice
    1/2 tsp. pepper
    1/3 c. butter
    1 onion, chopped finely
    1 c. diced carrots
    1 can water
    1 tsp. salt
    2 Tbsp. Parmesan cheese, grated
Preparation
    Place olive oil, butter, chicken and onion in a skillet. Saute until chicken is done.
    Stir frequently. Cook carrots in a saucepan until done.
    Add the peas and carrots. Cook for 5 minutes. Add the stock and water; stir. Bring to a boil and add rice.
    Cook for about 20 minutes or until the rice is tender.
    Add salt, pepper and cheese; mix well.
    Serve hot.
