Sweet Potato Casserole With Praline Topping - cooking recipe

Ingredients
    1 c. all-purpose flour
    2/3 c. packed brown sugar
    1/4 c. chopped pecans, toasted
    1/4 c. stick margarine, melted
    1/2 tsp. cinnamon
    4 medium sweet potatoes, peeled & halved (about 2 1/2lb.)
    1/2 c. sugar
    1 1/2 tsp. vanilla
    1 egg white
    1 (5oz.) can fat free evaporated milk
    cooking spray
Preparation
    Preheat oven to 350\u00b0.
    Combine first 5 ingredients in a small bowl, stirring to form a streusel.
    Set aside.
    Place potatoes in a Dutch oven.
    Add water to cover.
    Bring to boil, cover, reduce heat and simmer 30 min. or until tender.
    Drain well.
    Mash in a large bowl.
    Stir in 1 cup streusel, sugar, vanilla, egg white and milk.
    Spoon into a 2 qt. casserole coated with cooking spray and top with remaining streusel.
    Bake at 350\u00b0 for 45 min.
    Serves 8.
