Eggplant Casserole - cooking recipe

Ingredients
    1 c. milk
    1 egg
    1/2 c. mild Cheddar cheese (adjust to taste)
    1/2 pkg. crackers, crumbled
    1/4 c. diced onion
    1 large eggplant, sliced, diced and boiled until soft
Preparation
    Combine all the ingredients in a bowl.
    Place in a medium size casserole dish.
    Sprinkle extra cheese on top.
    Bake at 350\u00b0 for 30 to 45 minutes.
