Mock Crab Cakes - cooking recipe
Ingredients

2 c. grated zucchini
2 large eggs, lightly beaten
1 c. fine dry breadcrumbs
3 green onions, chopped
2 to 3 tsp. Old Bay seasoning
1 tsp. mayonnaise or salad dressing
vegetable oil
Preparation

Drain zucchini well, pressing between layers of paper towels. Combine zucchini and next five ingredients in a large bowl. Divide in patties (mixture will be soft). Pour oil to depth of 1/2-inch in heavy skillet. Fry in hot oil over medium heat for 2 minutes each side. Drain on paper towels.
